Meatless Monday – Minty Strawberry Melon Gazpacho
When those delegates gathered in 1776 to sign the Declaration of Independence, do you know what they were eating?
Minty Strawberry Melon Gazpacho!!
Okay, okay I might be fluffing the story a bit, but that’s no reason not to prepare this beautiful, healthy recipe!
Did you know that 100 grams of watermelon contains 30 calories, it contains vitamins A & C and these compounds play an active role in fighting several cancers, as well as helping your kidneys, heart, high blood pressure, and infections..?
Basically, this delicious, vibrant recipe is calling your name and wants to be involved in your holiday.. so let’s get started!
Ingredients
2 cups cantaloupe, diced
2 cups seedless watermelon, diced
1 cucumber, peeled, seeded and diced
1lb strawberries, divided
1 TBS fresh lime juice
1 TBS fresh mint, finely chopped
Instructions
1. Put the cantaloupe, watermelon, cucumber and half the strawberries into a blender or food processor and mix until pureed.
2. Transfer to a bowl. Chop the remaining strawberries. Stir into the bowl, along with the lime juice and fresh mint.
3. Refrigerate. Gazpacho is best served cold.
