Meatless Monday – Winter Squash Curry
Get Curried-Away With Flavor and Fun!
A ridiculously yummy recipe that will ignite your love affair with Indian flavor is here for the taking! The Winter Curry Squash is a wonderful experience of aromatic concoctions- curry, squash, chickpeas and coconut milk! This is an uncomplicated dish to prepare with all the features of the perfect comfort food for the season. A hearty veggie meal is the best company to warm you up from the inside out, especially on a weekend evening with the sound of the rain outside.
All the rock star ingredients deliver such fun and flavor when mixed together. The squash has a mild, sweet flavor, which is an ideal match for the spicy red curry paste, cauliflower and carrots. The coconut milk, enhanced the curry flavor and, as a nice side benefit, cut fat and calories.

Winter Squash Curry
Ingredients:
2 cups butternut squash, diced
2 cups cauliflower
1 15oz. can chickpeas, rinse and drain
1 carrot, diced
1 small red onion, diced
2 cloves garlic, mined
2 cups veggie broth
1 cup coconut milk (not canned)
1 tablespoon red curry paste
salt and pepper to taste
Instructions:
- Sauté onion, garlic and carrots in 2-3 tablespoons of water for 3 minutes.
- Add the butternut squash, cauliflower, chickpeas and veggie broth. Cook for 10 minutes or until veggies are soft in medium heat.
- Add the curry paste and coconut milk. Cook until well blended.
- Season with salt and pepper. Serve.
