Meatless Monday – Winter African Stew
One Pot Jackpot!
This is the bomb! A hearty, protein-rich and warming African inspired stew that is perfect for this chilly winter season! The flavors are so amazing and each ingredient compliments one another flawlessly.
The Winter African Stew is the ultimate comfort food, which has the wonderful blend of the sweet, nutty and juicy flavors in one pot. The peanut butter, tomatoes and spinach are an interesting combo, resulting in a gorgeous tasty meal that deserves a two-thumbs up. This creamy, nourishing and super easy recipe is another addition to your list of favorites in the plant-based, no oil no dairy category!
Truly a crowd pleaser that will captivate even the picky-eater in the group. Not only is this stew super delish, but also the healthiest of ingredients are chosen and incorporated in this recipe. The protein and the nutrients are beef-up by these tremendous chickpeas and butternut squash veggies and the tomatoes provide a great dose of beta-carotene that fights cancer. And what about the spinach?
Now, it’s time to feel like winning the jackpot! Happy eating!
Winter African Stew
Ingredients:
1 yellow onion, diced
1 carrot, diced
2 celery stalks, diced
2 cloves of garlic, minced
2 cups vegetable broth
1- 15oz can of diced tomatoes
1- 15oz can of chickpeas, rinsed and drained
2 cups butternut squash, diced
2 tablespoon vegan peanut butter
2 cups fresh spinach
sea salt and pepper to taste
Instructions:
- Add all the ingredients in a pot, except the spinach.
- Cook for 10 minutes or until veggies get tender and soft.
- Add the spinach when all veggies are cooked. Then, Season with salt and pepper. Serve hot and enjoy!
