Meatless Monday – Thai Peanut Dip
Meet Your Latest Favorite Dip!
Whipping up a powerful dip for another added amazing creation to every healthy table via the Thai Peanut Dip – 100% plant-based, delicious and simply fantastic!
This dip is a roller coaster of fun & flavor with a combination of coconut and curry plus a hint of spiciness courtesy of the Thai red curry paste. The base composed of the creamy vegan peanut butter and the rest of our rock start ingredients have provided that extra layer of intricacy and strength that any non-dip lover would be drawn to.
You can add as much red curry as you want depending on the depth of spiciness you like. Another wonderful thing about this recipe is it can be served perfectly with a fresh veggie spring roll, or an awesome dressing, or an added attraction to your favorite sandwich!
And the best part is, all the rock star ingredients are absolutely divine and healthy, starting of with the peanut butter made from just 100% peanuts!
So enough of the cravings, it’s time for the real thing!
Thai Peanut Dip
Ingredients:
½ cup canned coconut mil (or depends on the thickness you like)
1 (8-ounce) jar roasted red bell peppers, seeded and well drained
1 tablespoon fresh ginger
2 minced garlic
1 tablespoon low sodium tamari
1 tablespoon Thai or red curry paste
1 cup vegan creamy peanut butter
fresh cilantro sprigs, for garnish
Instructions:
1. Put the coconut milk, roasted red bell peppers, ginger, garlic, curry paste, and tamari in a blender. Process them on high speed until desired consistency is achieved.
2. Add the vegan peanut butter, one spoonful at a time, until mixture thickens to a dip consistency.
3. Garnish with cilantro.
