Meatless Monday – Protein Packed Quinoa Burgers

Life is so endlessly delicious, especially when you are treated with these Protein Packed Quinoa Burgers that are just so divine! These burgers are the perfect, healthy combo of super foods- kidney beans and quinoa, and all the flavors and spices that create the most delectable taste ever! The texture, taste and visual charm of these gorgeous patties all hit the target. The burger patties are delightfully crispy and fantastic, a great meatless option, that even meat-lovers and picky eaters would love!
This recipe is so easy to make, as far as vegan burgers are concerned! Step 1, 2, 3, and you’re ready! Plus these burgers are so versatile- you can either have them on a vegan bun or just top it with a bed of fresh greens, tomatoes, avocado and salt and pepper… oh so yummy! These patties are packed with protein and fiber as well as other beneficial nutrients, and they are very filling. At this point, allow me to give you a run down of the health benefits of one of the rock star ingredients, the kidney beans…

Protein Packed Quinoa Burgers
Ingredients:
1 cup quinoa
1 ¼ cup water
1 15-oz can kidney beans, drained and rinsed
2 tablespoon barbeque sauce
2 tablespoon ketchup
2 tablespoon low sodium soy sauce
1 tablespoon yellow mustard
1 teaspoon onion powder
1 teaspoon garlic powder
Instructions:
- In a pot, combine quinoa and water and bring to a boil. Once boiling, reduce heat to low and continue to cook until fluffy and all water has evaporated, about 15 minutes.
- Mash beans with a fork in a mixing bowl, then add remaining ingredients in order plus the cooked quinoa. Stir until all ingredients are combined. Then make patties.
- Heat a non-stick pan in then cook the patties with no oil for 5 minutes or until patties gets brown on each side.
