Meatless Monday – Olive Hummus
Happy Day, Hummus Day
Let’s start the week with something exciting… presenting my Fire-Driven version of I Love Olive Hummus! This hummus recipe may sound so simple yet really doesn’t taste plain at all! It’s amped with so many flavors in one bite that you would not believe how this miracle can happen by just combining all the amazing ingredients together.
This is a perfect piece for any occasion especially for those who do not have the luxury of time in their hands but would like to WOW an audience. An all around recipe, and great for a pick me up type of snack. You can use this with just about anything- appetizer with veggies or fruits or vegan crackers, a salad topping, a sandwich filling, or for a dinner pasta or pizza! Very yummy and healthy as it provides the necessary nutrients your body needs, starting with the Olives!
And so without further ado, excitement is served….
Olive Hummus
Ingredients:
1 can 15-oz (400g) olives, pitted & rinsed (add more for garnish)
2 cans 15-oz (400g) chickpeas, rinsed
1 tablespoon tahini
sea salt and pepper to taste
2 garlic cloves
1 tablespoon red wine vinegar
some water, as needed
Instructions:
- Put all the ingredients into a blender, and process until creamy. Garnish with olives. Serve and enjoy!
