Meatless Monday – Italian Flavor Quinoa

Come fly with me to Italy! Today let me give you a delicious trip via an Italian-flavored Quinoa dish that will bring your taste buds to wonder-foodland! You will absolutely love today’s eats, and if you are not familiar with quinoa yet, I guarantee that this dish will make you hook on it- forever!
The key to this fabulous recipe is to use fresh veggies. Yes, the ingredients may seem simple, but when you combine them all together, it tastes oh-so good! Using succulent cherry tomatoes, fresh basil, and mushrooms really make the flavors pop!
This dish is gluten free, low fat and heart healthy. It is very nutritious as it features so many health benefits from all the rock star ingredients. The cherry tomatoes provide Vitamin B6, which aids in producing red blood cells and immune function as well. The fresh basil contains the enzyme eugenol that can act as an anti inflammatory agent. The mushrooms are rich in zinc and increase our vitamin D levels. Our main ingredient Quinoa is such a versatile grain, it is so healthy for you yet so light.

Italian Flavor Quinoa
Ingredients:
2 cups quinoa, rinsed and drained
1 cup vegetable broth
1 cup water
1 cup cherry tomatoes cut in halves
1 and ½ cup of mushroom, sliced
½ onion, diced
2 cloves garlic, minced
1 teaspoon Italian seasoning
2 table spoon fresh basil
sea salt and pepper to taste
Instructions:
- In a pot, sauté with water the onion and garlic for 3 minutes. Then add the tomatoes, mushrooms, and Italian seasoning. Cook for 3 more minutes.
- Add the quinoa, water vegetable broth, salt and pepper then boil.
- Reduce the heat to low, then cook for 15-20 minutes or until the liquid is absorbed.
- Serve with a garnish of fresh basil.
