Meatless Monday – Hearty Veggie Bowl
I Heart Veggies!
Hold on to your hats ladies and gentlemen coz I have discovered my latest taste-craze: all colorful and fun in one bowl! I call it the Hearty Veggie Bowl, packed with all the most flavorful and nutritious veggies that will nourish your body and beyond.
To be honest, I just used what I have in my fridge last weekend – potatoes (purple of course!), green beans and a mixture of what I have in my pantry- diced tomatoes and some veggie broth! Add a little imagination and viola, the perfect hearty meal for this kind of season!
The Hearty Veggie Bowl is such an easy meal prep idea. You can even make a huge batch when you cook it, and have some leftovers for throughout the week. I guarantee it’s still going to be as mucho delicioso the first time! And did I say how amazingly healthy this dish is? OMG, let’s start with the purple potatoes…
I’m not going to let you wait any longer. So here’s how I heart my veggies…
Hearty Veggie Bowl
Ingredients:
2 cups purple potatoes, diced
2 cups green beans, cut into strips
½ onion, diced
2 cloves of garlic, minced
2 15-oz can of diced tomatoes with juice
1 can veggie broth
sea salt and pepper to taste
Instructions:
- In a large pot, sauté the onion, garlic and veggies with ½ cup of water for 5 minutes or until veggies are tender.
- Add the diced tomatoes with the juice, and the veggie broth then simmer for 5-10 minutes over medium heat.
- Season with salt and pepper.
