Meatless Monday – Cinnamon Banana Bread Pudding

Banana pudding lovers- get ready to experience a different kind of high with this ultimate plant-based recipe. It’s “cinnamony,” rich, easy and delicious. This amazing creation should be shared immediately, it’s pure down-home comfort, and most likely to give you that ear-to-ear smile of healthy happiness!
Speaking of healthy benefits, Ezekiel bread is so packed with protein and fiber. When most bread contain added sugar, this one has none! It is also made from organic, sprouted whole grains.
Ezekiel bread contains several different types of grains such as wheat, millet, barley and spelt and legumes such as soybeans and lentils! Now, what more can you ask for?

Cinnamon Banana Bread Pudding
Ingredients:
1 ripe banana
½ cup dates
½ cup almond milk
1 teaspoon cinnamon
3 slices Ezekiel cinnamon raisin bread, cubed
1/3 cup coconut milk
Instructions:
1. Pre heat oven to 375.
2. Place bread cubes in large mixing bowl.
3. Blend bananas, dates, almond milk, and cinnamon till smooth. Pour over bread and mix well.
4. Transfer in a small baking dish. Pour the coconut milk.
5. Bake for 30 minutes, or until the bread looks golden and caramelized.
Serve and enjoy!
