Meatless Monday- Carrot and Chickpeas Burger
Simply Brilliant Burgers!
A fabulous combination of flavors is my treat for you today! Buckle up and enjoy the plant-based adventure as I serve you a homemade veggie burger featuring the vibrant carrots, chickpeas and a lot of yummy-ness!
The Carrot and Chickpea Burger is one super quick and easy meal that is satisfyingly tasty. Each patty is jam-packed with a delicious and exciting aroma brought to perfection by healthy ingredients. The carrots and chickpeas are completely meant for each other as they offer a light and sweet blend of flavor. The cumin provides that distinct earthy and nutty taste, with a slight hint of lemon, while the coriander gives a citrus-curry type of essence to the mixture. Serve these phenomenal burgers traditionally in a bun, or get creative- in a lettuce wrap, or on top of salads, or under sautéed onions or over flavored brown rice. These burgers are screaming party- an awesome addition to your New Year’s Eve menu.

Carrot and Chickpeas Burger
Ingredients:
1 15oz. can chickpeas, drained
3 medium-sized carrots, grated
3 cloves garlic, minced
parsley sprigs, finely chopped
1 teaspoon ground coriander
1 teaspoon cumin
sea salt and pepper to taste
½ cup oats flour
1 tablespoon ground flax seed
Instructions:
- Combine all the ingredients together in a food processor or blender. Blend until the mixture sticks together. Some chunks are ok, as long as it all holds together when you press into a patty shape.
- In a non-stick pan, cook the patty for about 4 to 5 minutes on each side.

Sound delicious I look forward to trying it. Wondering if you have a sub for the garlic I am allergic and love garlic but it doesn’t love me. Any suggestions would be appreciated.
You can substitute garlic with chives or other herbs to enhance the flavor.
Can I use chia seeds instead of flax?
Yes, you can use chia seeds and the result will be as healthy and as yummy!
