Meatless Monday – Banana Rolls
Are You Ready to Rock and Banana Roll?
Plantfire Meatless Monday presents the sweetest part of your day.. The Banana Roll! This quick and tasty concoction can be for breakfast, a snack, a dessert, or an on-the-go treat. My entire family loves this meal and I know I like preparing it… just about 5 minutes and I’m in and out of the kitchen, no “cooking” required.
Allow me to tell you a bit about why this meal is not only good on your taste buds but great for your body!
What is Rainbow Swiss Chard? – Rainbow Swiss Chard is definitely a power food! With its earthy and slightly salty taste, it pleases the palate in two ways: first with its nutrient-dense leaves (full of fiber, magnesium, and vitamins C, E &K) and second with its crunchy stalk. Don’t let its name confuse you, though. This green is originally from Sicily, not Switzerland, and is a go-to in Mediterranean cuisine.
Banana – I know the first health benefit to pop into your mind is potassium, but the banana is a wonderland of various nutrients – Vitamins B6 & C, Maganese, Fiber and more. Bananas also provide cardiovascular protection, contain antacid effects that protect against stomach ulcers, bananas are a smart move if you suffer from elimination problems, they protect your eyesight, help build better bones, and promote kidney health!
Peanut Butter – Did you know peanut butter is good for weight loss? A serving of peanut butter has 3 mg of the powerful antioxidant vitamin E, 49 mg of bone-building magnesium, 208 mg of muscle-friendly potassium, and 0.17 mg of immunity-boosting vitamin B6. It also helps that it is so very creamy, and delicious and makes the perfect partner to many fruits!
Without further adieu here is the Banana Roll recipe and fun video of me preparing it at my summer San Diego beach home!
Ingredients:
(Makes 2 rolls and 10 individual bites. If you prefer a smaller portion then use your best judgment to cut down some of the ingredient amounts)
2 large rainbow swiss chard leaves
2 bananas
1 cup peanut butter (peanuts only!)
1/2 cup raisins
maple syrup, drizzled as desired
Instructions:
1. Cut the stems off of your rainbow swiss chard leaves, as to have a flat surface to work with. Lather on a layer of peanut butter, on each leaf. Sprinkle raisins onto peanut butter covered leaves.
2. Peel open 2 bananas. Place each banana on it’s own leaf, then drizzle maple syrup over top. Roll the leaf around the banana like a burrito, and chop into bite sized pieces.
3. Serve and Enjoy!
