Looking for calcium… Got Bok Choy?
Before you reach for another glass of white puss filled liquid meat to get your calcium, why not try some delicious Bok Choy instead?
Although the dairy council with its several hundred million dollar advertising budget would like you to believe that dairy is the best and only way to get the calcium our body needs, the fact of the matter is that the calcium in bok choy is more absorbable than almost any other food because of the low presence of compounds called oxalates, which bind up calcium making it difficult to absorb. 54% of the calcium in bok choy is absorbable, versus only 32% in milk.
Todays video recipe for Bianca’s Baby Bok Choy is about as simple as you can get while cooking in the kitchen!
Bianca’s Baby Bok Choy
4-6 small heads baby bok choy (left intact), feel free to use any variety of bok choy
umeboshi vinegar or red wine vinegar
Gomashio (can be found in the Asian aisle typically near the sesame seeds or you can make it, SEE RECIPE BELOW. If you cannot find it, you can just use sesame seeds)
Bring water to a boil in the bottom of a steamer or a pot fitted with a steamer basket. Add the bok choy and steam for 1 to 2 minutes or just until the vegetable is staring to wilt. You do not want to over cook it! Transfer them to a serving platter. Drizzle vinegar over bok choy before serving and top with gomashio or sesame seeds.
Recipe for Gomashio
1 teaspoon sea salt
6 tablespoons sesame seeds
Heat the salt in a small dry skillet over medium heat. Stir until it becomes really dry and ever so slightly brown, about 2 or 3 minutes. Remove the salt from the pan. Rinse the sesame seeds in a fine mesh strainer. Place the seeds in the same dry skillet, and toast over medium heat until the seeds have a nutty aroma, puff up a little, and crush easily between your fingers. Crush the salt with a mortar and pestle until it is a fine powder. Add the sesame seeds and crush until they are about 80% ground.
