Meatless Monday – Hummus Pizza

To Roasted Red Pepper Hummus Pizza!
This amazing, crowd-pleasing dish is here and ready to make you smile!
(Be careful of unintentional mouth watering, it is common to lose control while making this meal.)
I’ve crafted a quick video of me preparing this meal at home. Feel free to follow along and get inspired to uniquely veggie-fie your pizza!
Ingredients:
4 whole wheat pita
1/2 cup roasted red pepper hummus (Ingredients below)
1/2 cup spinach
1/2 cup mushrooms
1/3 cup black olives
basil to garnish
Ingredients for Hummus:
2 15-oz. cans of chickpeas, drained & rinsed
2 red peppers, roasted (or half of a 15-oz. jar)
3 TBS fresh lemon juice
2 cloves of garlic
½ tsp cumin
sea salt, for taste
Instructions:
Hummus
Place all ingredients in to your food processor or Vita-mix and blend until smooth.
Pizza
1. Spread the hummus on your whole wheat pita and proceed with the rest of the ingredients.
2. Bake at 300 degrees for 12 minutes. Oven times may vary, if you prefer a crispier crust add a couple extra minutes.
3. Slice with a pizza cutter and enjoy!
