Bella’s Blackberry Pancakes |
- 2/3 cup Arrowhead Mills Organic Buckwheat Pancake Mix (available in gluten-free) *DO NOT follow the recipe on the package*
- 1 cup plant milk (soy, almond, or rice)
- 1/2 cup mashed blackberries
- 1 tsp ground flaxseed*
- 1/4 tsp cinnamon
- Whole blackberries, for garnish
- Preheat your griddle or pan while making the batter.
- Combine the dry ingredients.
- Add the milk & beat until blended.
- You can add more or less milk depending on desired thickness of batter.
- Finally, fold in the blackberries.
- Pour batter onto hot pan or non-stick griddle.
- When the bubbles form on the top of the pancakes & the edges are beginning to dry out, flip to the other side.
- Top with Earth Balance Organic Buttery Spread, pure maple syrup & blackberries.
*Flax seeds are rich in Omega-3 fatty acids, lignans, and fiber. Lignans are anti-cancer, anti-viral, and anti-bacterial constituents, and flax seeds are one of the best sources of them. Golden organic seeds are recommended.
