Meatless Monday – Banana Parfait on the Go
Do You Want a Delicious Breakfast with Limited Time?
Vanessa’s latest Meatless Monday creation is bound to please your taste buds and morning routine! Start your day off with a delectable, super food treat and get ready for tasty productivity all day long.
This recipe is the perfect opportunity to add in your favorable toppings or healthy goodies. We chose to include some chia seeds and I would encourage you to do the same seeing as they are a great source of omega-3 fats and fiber. Did you know that Chia Seeds are a power house of healthful supplements for your body? They help promote strong teeth and bones while also combating disease. This little addition on top of your banana and/or seeds is going to make for one amazing breakfast!
The Time Has Come!
Ingredients:
bananas (Or try this idea with strawberries, pineapple, etc.)
Your choice of non-dairy yogurt (We use soy vanilla yogurt – Try fruit flavored for an extra kick!)
Homemade granola
add on ideas: coconut shreds, raisins, pumpkin seeds, sunflower seeds, chia seeds, carob chips.
Popsicle sticks or silverware to insert in the bananas
Instructions:
1. Pour granola into a very shallow dish or plate. Peel bananas, cut in half, and insert Popsicle sticks. Dip into yogurt (or coat with knife) then roll into granola and add-ons. Place on a parchment or wax-lined tray and freeze. Keep uneaten pops in freezer
