Your Kids Will Love ’em Banana Pancakes
These are a great alternative to your typical pancakes. Oil-free and made with buckwheat as opposed to regular flour, these pancakes will make your kids happy and healthy and start their day the right way.
- 2/3 cup Arrowhead Mills Organic Buckwheat Pancake Mix (available in gluten-free)
- *Do not follow the recipe on the package*
- 1 cup plant milk (soy, almond, or rice)
- 1 sliced banana
- 1 teaspoon ground flaxseed*
- 1/4 teaspoon cinnamon
Preheat your griddle or pan while making the batter. Combine the dry ingredients. Add the milk and beat until blended. You can add more or less milk depending on desired thickness of batter.
Finally, fold in the bananas. Pour batter onto hot pan or non-stick griddle. When the bubbles form on the top of the pancakes and the edges are beginning to dry out, flip to the other side. Top with Earth Balance Organic Buttery Spread and pure maple syrup. Makes about 4-5 pancakes.
Variation: You may add blueberries instead of bananas.
*Flax seeds are rich in Omega-3 fatty acids, lignans, and fiber. Lignans are anti-cancer, anti-viral, and anti-bacterial constituents, and flax seeds are one of the best sources of them. Golden organic seeds are recommended.
