What the heck is a jicama salad?
I often hear it’s too complicated to eat a plant-based diet… or it’s so boring eating the same old fruits and vegetable, beans and grains. I can tell you that the moment our family started living the Plantfire lifestyle, our food choices expanded not contracted. One of the many new and different vegetables that we started incorporating into our diet was the Jicama.

Fun facts about the jicama
Jicama is a relative of the potato family.
My girls call it the Mexican potato.
The jicama is a dietary staple in Latin America and widely grown in Mexico and Central America.
Jicama looks similar to a large turnip or a radish, and it is a delicious alternative to the water chestnut typically used in Asian stir fry.
Unlike other potato varieties, the skin is typically peeled before eating it raw. Raw jicama tastes similar to an apple or pear.
Jicama is a great addition to your veggie tray or to top any of your favorite salads.
The Jicama is a calorie counters dream… no fat and only 45 calories for a 1 cup of chopped jicama!
Jicama is available year-round. The best place to pick up your jicama is at a Hispanic or ethnic grocery store.
