Vegan Southern Comfort Bowl
Ingredients:
½ lb finger potatoes
8 oz. sliced mushrooms
1 tomato, diced
½ onion, diced
2 cloves of garlic, minced
sea salt and pepper, to taste
Instructions:
1. Dice potatoes and boil for 20 minutes
2. In a skillet add water or veggie broth, salt, tomatoes, onions, garlic and simmer for 5 minutes.
3. Add the potatoes stir all together for 2 minutes.
4. Season as desired and serve!
