The perfect appetizer for your Oscar party!
This weekend is Hollywood’s biggest event of the year … The Academy Awards. In our home, this is an event not to be missed. We usually invite family & friends and we plan a plethora of appetizers and treats to nibble on throughout the afternoon and into the evening festivities. So in honor of this Special Event Sunday, I am sharing with you my delicious Hummus Stuffed Mushrooms recipe. This recipe is perfect anytime, but especially when you are planning a party or attending a potluck.
The best part about this recipe is that it is virtually fat-free, which equals no-guilt eating. Plus, you’ll get a big dose of tasty and nutritious! 🙂
Hummus Stuffed Mushrooms |
- 16 ounces of mushrooms
- 2 15-oz. cans of chickpeas, drained & rinsed
- 2 red peppers, roasted (or half of a 15-oz. jar, oil free) (if you’d like, you can omit)
- 3 TBS fresh lemon juice
- 2 cloves of garlic
- ½ tsp cumin
- sea salt, for taste
- fresh basil, for garnish
- Clean the mushrooms with a dry paper towel to remove dirt.
- Remove the stems.
- Prepare hummus by placing all ingredients, except mushrooms, into your food processor and blending until smooth & creamy.
- Scoop the hummus into the mushroom caps.
- Top with a fresh basil leaf or your favorite fresh seasoning.
- Enjoy!
