This weekend is Hollywood’s biggest event of the year … The Academy Awards. In our home, this is an event not to be missed. We usually invite family & friends and we plan a plethora of appetizers and treats to nibble on throughout the afternoon and into the evening festivities. So in honor of this Special Event Sunday, I am sharing with you my delicious Hummus Stuffed Mushrooms recipe. This recipe is perfect anytime, but especially when you are planning a party or attending a potluck.

 

The best part about this recipe is that it is virtually fat-free, which equals no-guilt eating. Plus, you’ll get a big dose of tasty and nutritious! 🙂

Hummus Stuffed Mushrooms

Ingredients
  • 16 ounces of mushrooms
  • 2 15-oz. cans of chickpeas, drained & rinsed
  • 2 red peppers, roasted (or half of a 15-oz. jar, oil free) (if you’d like, you can omit)
  • 3 TBS fresh lemon juice
  • 2 cloves of garlic
  • ½ tsp cumin
  • sea salt, for taste
  • fresh basil, for garnish
Instructions
    1. Clean the mushrooms with a dry paper towel to remove dirt.
    2. Remove the stems.
    3. Prepare hummus by placing all ingredients, except mushrooms, into your food processor and blending until smooth & creamy.
    4. Scoop the hummus into the mushroom caps.
    5. Top with a fresh basil leaf or your favorite fresh seasoning.
    6. Enjoy!

    So glad I found your blog on the FB vegan page wall! I love it already after reading a few posts. Love raw mushrooms with filling, definitely be trying this out 🙂

      I am so happy you found me too! This hummus recipe is definitely a staple in my kitchen…my youngest daughter eats it straight from the spoon but I am always trying new creative ways to eat it…Mushrooms are one of the many vehicles for this nutritional tasty rockstar!
