Meatless Monday – Swiss Chard Garden Delight

It is the Plantfire hope that this salad graces your dinner table in the most colorful way! Now, it wouldn’t be a Meatless Monday post if we didn’t talk about the amazing health benefits:
Swiss Chard – Do you know how Swiss Chard got it’s name? Simple, this leafy green was identified by a Swiss botanist. (Thank you, sir!) Swiss chard is a nutritional powerhouse – an excellent source of vitamins K, A, and C, as well as a good source of magnesium, potassium, iron, and dietary fiber. Swiss Chard, like spinach, is the store-house of many phytonutrients that have health promotional and disease preventing properties. It is also a part of the goosefoot family, aptly named because the leaves resemble a goose’s foot!
Celery – If you’ve become accustom to thinking of celery as a crunchy, low-cal veggie and not a key part of you health support then it’s time to think again! The antioxidant support we get from celery is largely due to its phenolic nutrients that have been shown to help protect us against unwanted oxygen damage to our cells, blood vessels, and organ systems. Celery is known to contain at least eight families of anti-cancer compounds. Among them are the acetylenics that have been shown to stop the growth of tumor cells. Celery effectively balances the body’s blood pH, neutralizing acidity! Make sure to stock up on celery if you’re an athlete – Celery juice acts as the perfect post-workout tonic as it replaces lost electrolytes and rehydrates the body with its rich minerals.
Allow me to present the Swiss Chard Garden Delight recipe
Ingredients:
3 cups swiss chard
2 cups spinach
1/2 cup cucumber, diced
3/4 cup yellow cherry tomatoes
1/2 cup celery
1/2 cup baby carrots
1-2 tbsp white balsamic vinegar
1/2 cup almond slivers, to garnish
2 cups roasted red pepper hummus
Roasted Red Pepper Hummus Ingredients:
2 15-oz. cans of chickpeas, drained & rinsed
2 red peppers, roasted (or half of a 15-oz. jar)
3 tbsp fresh lemon juice
2 cloves of garlic
1/2 tsp cumin
sea salt, to taste
Place all ingredients in your food processor or blender and blend until smooth
(These quantities will make extra, that way you can save for other salads or veggie dipping. If you want just enough to use for the Swiss Chard Salad dressing then only prepare half of the current ingredient quantities)
Instructions:
Dressing
1. Take your already prepared roasted red pepper hummus and add in 1-2 tbsp of white balsamic vinegar.
2. Stir together until your reach your desired dressing creaminess.
Salad
1. Place swiss chard and spinach in a bowl. Add cucumbers, celery, baby carrots, and yellow cherry tomatoes.
2. Top with dressing, stir ingredients together. Sprinkle on slivered almonds and add fresh cracked pepper.
3. Serve and enjoy!
