Sweet Maple-Nut Salad and Blueberry Dressing
Ingredients:
Maple-Nut Clusters
1/3 cup sesame seeds
¼ tsp. ground cinnamon
pinch of sea salt
½ cup raw walnut halves
2 tbs maple syrup
Salad and Dressing
2 cups fresh blueberries, divided
2 tbs unsweetened applesauce
3 tbs lemon juice
1 medium package of mixed greens
½ cup fresh mint, minced
Sea salt and pepper, to taste
Instructions:
Maple-Nut Clusters
1. Mix sesame seeds with cinnamon and salt and put to the side.
2. Smal skillet over medium heat and add walnuts and toast for about 5 minutes or until fragrant.
Continue shake around pan. Add sesame seed mixture and cook for another minute, stirring constantly.
Stir in maple syrup and cook for 2-3 minutes, stirring constantly. Transfer to you Silpat (or parchment
paper)
3. Put this to the side and let it cool, once it has cooled down break nut clusters into smaller pieces.
Salad and Dressing
1. Puree 1 cup of blueberries, applesauce, lemon juice, sea salt and pepper (to taste) in a blender.
2. toss the mixed greens with mint in a large bowl, with some of the dressing. Garnish with nuts and rest
of dressing.
3. Serve!
