Ingredients:
2 cups fresh blueberries, divided
2 tbs unsweetened applesauce
3 tbs lemon juice
1 medium package of mixed greens
½ cup fresh mint, minced
Sea salt and pepper, to taste
Instructions:
1. Puree 1 cup of blueberries, applesauce, lemon juice, sea salt and pepper (to taste) in a blender.
2. toss the mixed greens with mint in a large bowl, with some of the dressing. Garnish with nuts (optional) and rest
of dressing.
3. Serve!
