Sun-Dried Tomato Hummus
Sun-Dried Tomato Hummus |
- 2 cloves of garlic
- 1 15-oz. can of garbanzo beans
- 1/2 cup hot water
- sea salt, to taste
- 2 Tbs of lemon juice
- 8 sun-dried tomatoes, soaked in water** (see notes)
- 1 Tbs minced dried cilantro
- Blend all the ingredients in a food processor or blender.
**(in boiled water they rehydrate instantly, otherwise it will take about an hour)
So yummy! Great with anything and easy to make. Made this recipe for an on-the-go lunch for school with some homage pita chips!
