Strawberry Gazpacho with Cilantro Sour Cream
Ingredients:
Gazpacho
2 pounds strawberries, hulled and halved
1 small mango, peeled and chopped
1 red bell pepper, chopped
1 large shallot
2 tbs unsweetened applesauce
1/3 cup chopped cilantro, divided (leave out for garnish)
2 tbs lime juice
3 tsp maple syrup
Sea salt and pepper, to taste
Cilantro Sour Cream Ingredients
1 cup cashews
2 tbs lime juice
1 tbs maple syrup
½ cup unsweetened almond milk
2 tbs fresh cilantro
Instructions – Blend all ingredients until creamy
Instructions:
1. Blend strawberries, mango, red bell pepper, shallot, applesauce, lime juice, maple syrup to a gentle
puree with some texture remaining.
2. Transfer to a bowl and season with sea salt and pepper, to taste.
3. Refrigerate for 30 min, place cilantro sour cream on top and enjoy
