Roasted Red Pepper Hummus (Doubles as Dressing)
Ingredients:
2 15-oz. cans of chickpeas, drained & rinsed
2 red peppers, roasted (or half of a 15-oz. jar)
3 tbsp fresh lemon juice
2 cloves of garlic
1/2 tsp cumin
sea salt, to taste
Place all ingredients in your food processor or blender and blend until smooth
(These quantities will make extra, that way you can save for other salads or veggie dipping. If you want just enough to use for the Swiss Chard Salad dressing then only prepare half of the current ingredient quantities)
Instructions:
1. Take your already prepared roasted red pepper hummus and add in 1-2 tbsp of white balsamic vinegar.
2. Stir together until your reach your desired dressing creaminess.
