Raw Thumbprint Cookies

- 3/4 c. dates, pitted
- 3 c. rolled oats
- 1 1/2 c. creamy almond butter
- 1/2 c. shredded, unsweetened coconut
- juice & zest of 1 orange
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 3/4 c. all-fruit preserves, cranberry or wild-berry
- 2 TBS ground flax seeds
- Process the dates with the orange juice.
- Add a little bit of water or orange juice if it is too dry.
- Separately, process the oats until coarsely ground, then transfer to bowl.
- Add the date mixture, almond, coconut, orange zest, cinnamon & salt to the bowl of oats & knead to make a dough.
- Roll the dough into balls.
- Make an indentation in each cookie by pressing down with your thumb.
- Place a spoonful of preserves in each cookie.
- Chill for an hour before serving.
- Enjoy!
