Meatless Monday – Walnut Carrot Muffins

Flavor and fun is combined in baking another healthy snack food to keep any hunger for sweetness, goodness and happiness covered, through the Walnut Carrot Muffins!
This amazing recipe gives you another way to get the kids to eat healthy with so much gusto. Perfect for any fun-time party with the whole family as well!
The Walnut Carrot Muffins are golden brown inside-out creating that beautiful and enticing texture for your latest indulgence. The muffins are very dense, slightly sweet, moist and tender creating a heavenly experience for every palate. The whole wheat flour makes it even healthier!

So, let’s get this party on!
Walnut Carrot Muffins
Ingredients:
2 tablespoon walnut, chopped
1 ½ cups whole wheat pastry flour
1 cup date sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 ½ teaspoon ground cinnamon
½ teaspoon sea salt
1 large carrot, shredded
1 ½ cup unsweetened applesauce
Instructions:
1. Preheat oven to 350 degree-fahrenheit.
2. Mix flour, baking powder, baking soda, raw sugar, salt and cinnamon in a medium bowl.
3. Combine applesauce, carrots and 1 tablespoon of chopped walnuts.
4. Add dry mix to wet mix in batches and stir until just combined.
5. Fill muffin tins until ¾ full and bake for 15 to 18 minutes or until toothpick comes out clean.
6. Add the remaining chopped walnuts as toppings.
7. Serve with any plant-based milk and enjoy!
