Meatless Monday – Vegan Southern Comfort Bowl
Grandma Got Run Over by a Hoard of…
Excited & Hungry Vegans!
If you think back on happy times, in the cold weather, it usually entails a warm bowl of grandma’s famous stew! Cozied up by the fire with wooly socks, family, and happy taste buds. I know as clean eating Vegans we tend to think we can’t have some of our favorite meals.. but I am here to say otherwise! I have taken my knowledge of whole foods, combined with my love for the classics, and created a tantalizing dish that is sure to please!
This Vegan Southern Comfort is the perfect, meatless meal to get you in the mood for this season, as well as take you on a healthy trip down memory lane! (If you have any favorite home-cooked meals from your past, I take requests! Send them my way and I’ll get a plant-based version created! Post your requests in the comments section below)
Now, I know you must be itching to find out what makes this meal of so delicious!
Ingredients:
½ lb finger potatoes
8 oz. sliced mushrooms
1 tomato, diced
½ onion, diced
2 cloves of garlic, minced
sea salt and pepper, to taste
Instructions:
1. Dice potatoes and boil for 20 minutes
2. In a skillet add water or veggie broth, salt, tomatoes, onions, garlic and simmer for 5 minutes.
3. Add the potatoes stir all together for 2 minutes.
4. Season as desired and serve!

I am trying to find good recipes as alternatives to traditional holiday meat meals. I would love to be able to prepare something to wow people over the holidays amd make them see that vegan eating is not as ‘boring’ as they think it is. I usually try to eat vegan, but am totally a vegetatian for sure. I am still trying to make the switch to completely plant-based. I still sneak in yogurt here and there, and cheese on occasion.
Any suggestions for family members that refuse to transition with me?!?

What’s worked with me in converting certain family members is first showing them the amazing taste, then listing out the benefits, then telling them the hard facts about their eating habits/ the future of their health. If you have those extra stubborn ones, which we all do, I would just lead by example and give them a healthy meal as often as possible!

Okay I was trying to remember your recipe, but was just winging it>>>>
I dumped in a can of Muir Glen Fire Roasted tomatoes, the garlic, and a little cumin, chili powder cinnamon. Some sliced zuccini, grated carrots and the potatoes. Simmered the whole mess for a while, and then topped with some avocado slices. Thanks for the inspiration, Vanessa!
