Meatless Monday – Sweet Potato and Greens Dal
Keeping It Warm With Bold Flavors!
In this time of year, when it’s chilly outside, your heart desires for something that will keep your body warm and cozy. What perfect timing for this hearty and comforting meal- the Sweet Potato and Greens Dal. To some of you who may not know about dal, well, it is a simple Indian lentil soup or stew, which you can have different variations depending on your imagination and cravings! My version is of course, 100% plant-based and oil free! This recipe is a confirmation that a nourishing and healthy plant-based meal does not need to be dull and unexciting!
Beauty lies in the simplicity of this recipe, as you only need about 20 minutes to cook this flavorful and energy packed dal. It also carries a creamy and bold taste that will soothe your evenings and fill your lunch with wonderful leftovers! This meal also has amazing health benefits starting with the nutritious lentils for a boost of fiber, protein and iron! In this recipe, greens are not just for style but most importantly it is to supply us with nutrients found in the lovely spinach…

Sweet Potato and Greens Dal
Ingredients:
2 cups fresh spinach
1 small sweet potato. skinned and diced
1 cup red lentils
1 small onion, chopped
3 garlic cloves, minced
a pinch of red pepper flakes (optional)
¼ teaspoon turmeric
¼ teaspoon garam masala
2 cups vegetable broth
3 cups water
sea salt and pepper to taste
Instructions:
- In a large pot, cook the lentils with 3 cups of water for 15 minutes. Set aside.
- In another pot, sauté in water the onion, and garlic for 5 minutes. Add the red pepper flakes, turmeric and garam masala. Add the veggie broth and the sweet potato.
- Add the cooked red lentils in the pot and simmer for 10 minutes or until the sweet potatoes are tender. Season with salt and pepper.
- Add the spinach and simmer for a minute. Serve and enjoy!
