SOUR CREAM, has Vanessa lost her mind!?
Never fear, I have created the most delicious plant based “sour cream” (I think’s it’s better than the original) and you’re bound to love it too! It’s a scrumptious mixture of juices, nuts, herbs, & more. I’d like to further ease your worries by giving you a few health facts about this oh-so tasty recipe:
Red Bell Peppers – Did you know that Red Bell Peppers are low in calories? So, even if you eat one full cup of them, you get just about 45 calories. Bonus: that one cup will give you more than your daily quota of Vitamin A and C! No more ibuprofen required – Red Bell Peppers contain several phytochemicals and carotenoids, particularly beta-carotene, which lavish you with antioxidant and anti-inflammatory benefits. They’re rich in fiber, potassium, manganese, and folate. So, pop some bell peppers into your shopping basket, and start reaping their rich health benefits!
Cashews – Crazy about your heart? Go nuts! Research shows that cashews have one of the highest antioxidant contents which is the key to their cardio-protective benefits. Cashews are also great for our bones because of their magnesium rich nutrients. Did you know about two-thirds of the magnesium in the human body is found in our bones? Packed with copper, tryptophan and phosphorus you can’t go wrong with a handful of these super tasty nuts.
Here is the recipe we’ve all been waiting for!
Ingredients:
Gazpacho
2 pounds strawberries, hulled and halved
1 small mango, peeled and chopped
1 red bell pepper, chopped
1 large shallot
2 tbs unsweetened applesauce
1/3 cup chopped cilantro, divided (leave out for garnish)
2 tbs lime juice
3 tsp maple syrup
Sea salt and pepper, to taste
Cilantro Sour Cream Ingredients
1 cup cashews
2 tbs lime juice
1 tbs maple syrup
½ cup unsweetened almond milk
2 tbs fresh cilantro
Instructions – Blend all ingredients until creamy
Instructions:
1. Blend strawberries, mango, red bell pepper, shallot, applesauce, lime juice, maple syrup to a gentle
puree with some texture remaining.
2. Transfer to a bowl and season with sea salt and pepper, to taste.
3. Refrigerate for 30 min, place cilantro sour cream on top and enjoy
