Meatless Monday – Springtime Veggie Soup
A Flavorful Spring Soup Shindig!
It’s such a beautiful weather lately here in Las Vegas… a perfect time to enjoy the radiance of sunlight, and the lightness of the breeze that embraces your body. My plant-based kitchen is now ready for some soup that says spring in each glorious spoonful! This is the time when I crave for delicious fresh veggies that bring forth the tasty goodness of warm broth and happiness. =)
The Springtime Veggie Soup combines all the essence and aroma of the season and exudes an exquisite and heavenly palette-pleasing experience, which you can indulge in any time, any day! The key to this soup is simple- fresh veggies, the amazing twist of each taste. You will love how all these veggies have come together in a seamless blend of flavors. A versatile soup, because you can definitely change some of the ingredients to your favorite ones.
A wonderful and nourishing meal that only takes a small amount of your time to put together. Healthy veggies cooked to create your own spring harvest in a bowl. All these ingredients are packed with nutrients that will give your body a boost of energy and strength. Let me give you an example with the artichokes…
It’s time to treat yourself with a fresh taste of the brightness of the season!
Springtime Veggie Soup
Ingredients:
6 cups vegetable broth
2 cloves garlic, minced
1 leek (white and green parts only), cut into half circles
2 celery stalks, diced
3 carrots, diced
1 15-ounce can artichoke drained and rinsed, cut into lengths
2 red potatoes, diced
1 spring of fresh thyme
8 ounces frozen peas
8 ounces spinach
salt and pepper to taste
Instructions:
- In a large pot, sauté with water the leek and garlic for 5 minutes or until soft. Add the carrots, celery and potatoes and sauté for another 5 minutes adding water when it gets dry.
- Add the veggie broth and wait for the soup to boil, then add the rest of the ingredients. Cook for another 5 minutes in low-medium heat. Season with salt and pepper.
