Meatless Monday – Rosa’s Red Lentil Burger
Wow! What a Yummy Burger!!!
Taste the goodness of pure comfort food! Having so much hale and hearty food in the kitchen like lentils, carrots, tofu, and mushrooms, I decided to make a completely plant-based chow that the entire family would love and enjoy! Combining these rock star ingredients from a taste perspective didn’t worry me; plus, it got me even more excited that my side kick Rosa is on board!
Introducing, Rosa’s Red Lentil Burgers! These burgers are packed with flavor, fiber and protein while still being low in fat. A heart healthy recipe that will surely kick your party up a notch!
Getting creative with this delicious recipe is another fun way to enjoy it. You can top these burgers with the usual burger things like lettuce, pickles, caramelized onions, and with what ever your heart desires!
A totally no-meat burger with the wonderful health benefits of all the ingredients, starting with the red lentils!
So without further ado, let the party begin!
Rosa’s Red Lentil Burgers
Ingredients:
1 pound red lentils
5 cups water, salted
1 cup minced onion
1/2 cup minced carrot
2 tsp minced garlic
2 cups chopped mushrooms
1 TBS freshly chopped oregano
1/2 tsp sea salt
1/8 tsp freshly ground black pepper
3/4 cup whole wheat bread crumbs or panko
4 1/2 tsp lemon juice
10-oz. firm tofu, pureed in a blender
Instructions:
1. In a large pot, simmer the lentils in salted water until tender. Drain & cool. Set aside.
2. In a large skillet, sauté the onion, carrot & garlic with a small amount of veggie broth or water for about 2 minutes. Add the mushroom, oregano and salt & pepper, to taste.
3. Cook until the mushrooms are tender and the liquid has evaporated, approximately 5 minutes. Allow to cool.
4. Add the bread crumbs, lemon juice, pureed tofu & cooked lentils and mix to combine.
5. Transfer to a large bowl. Chill for 30 minutes and then shape into 8 patties.
6. Cook in a dry frying pan on each side, until crisp & golden. Enjoy!
