Meatless Monday – Raspberry Chia Jam
Time To Pump Up the Jam!
Imagine a jam that is sugar free and completely plant-based… Well, that is my special #MeatlessMonday offering today- Raspberry Chia Jam! This is one of my much loved ways to “jam” as it’s fuss-free and ready to eat in no time! Plus you get all the raw yumminess of your favorite raspberry and the healthiness of the chia seeds.
This plantfire creation is super simple! Only 2 steps and you’re on your way to an omega 3 packed, no sugar, no oil homemade jam! One of the best parts is, you can use almost any type of berry you have in your fridge – strawberries, blueberries, blackberries- you name it! This jam is so delish you’ll be lured to eat it right away without cooling it anymore. Spread this on your homemade vegan pancake, toast or biscuit! Or just simply indulge on it as a stand-alone snack! Think of all the possibilities! But wait, there’s more- allow me to mention the amazing health benefits of our rock star ingredient- raspberry….
Let’s get ready to jam!
Raspberry Chia Jam
Ingredients:
½ cup raspberries
3 pitted dates, cut into small pieces
1 tablespoon chia seeds
*water
Instructions:
1. Process raspberries, dates and 3 table spoons water in a blender until mostly smooth, but with some chunks or until desired consistency is reached.
2. Transfer to a small bowl and stir in chia seeds.
3. Serve and enjoy!
