An amazing Buddha Bowl is served today with the idea of feeding and nourishing the body and soul. This Quinoa Buddha Bowl With Tahini Dressing is packed with so much nutritious and delicious elements that you will not think twice to indulge in it.
Gluten-free, and guaranteed no oil no dairy recipe, this bountiful bowl is a mixture of the super food quinoa and all the vibrant veggies you love. To add flavor and panache, the tahini dressing completes the ensemble of goodness. This 100% plantfire recipe is comforting and fill-you-up good, yet feels so light and warm.
An all around meal that is so easy to put together. You can challenge your creativity in preparing this Quinoa Buddha Bowl because of so many ways you can make it your own. You can actually throw together whatever you’ve got on hand like those veggies just sitting on your fridge, or your favorite veggies to make it more you, and viola- a mean nutritional punch in no time.
A recipe that rocks its health benefits. Protein and fiber are powered by the quinoa. Broccoli provides calcium and a good source of antioxidants. Kale is a natural source of folate that promotes healthy infant brain development. And of course the yellow carrots…

Quinoa Buddha Bowl
Ingredients:
1 ½ cup quinoa
2 cups vegetable broth
2 cups broccoli, cut in small florets, lightly steamed
1/2 handful of kale, chopped and lightly steamed
3 green onions, sliced
1 yellow carrot, julienned
1 big tomato, diced
1 zucchini, julienned
1 15-oz can chickpeas, rinsed and drained
For The Tahini Dressing:
2 tablespoon of tahini
2 tablespoon of maple syrup
3 tablespoon balsamic vinegar
2 tablespoon lime juice
1 clove of garlic, minced
2 tablespoon fresh parsley, minced
1 teaspoon miso paste
sea salt to taste
Instructions:
- In a pot, bring to a boil the vegetable broth. Add the quinoa before the veggie broth start to boil. Reduce the heat to low and cook the quinoa for about 15 minutes.
- Once the quinoa is cooked, mix the rest of the ingredients.
- To make the tahini dressing, just combine all the ingredients together.
- Add the tahini dressing to the quinoa mixture. Serve and enjoy.
