Meatless Monday – Plantfire Onion Rings

Yes, delicious plant-based food is one of my most favorite things in the world, aside from a gorgeous pair of shoes of course! =)
They say that happiness is homemade, so I re-invented the classic onion rings snack/ side/ appetizer- call it what you want, and made a superbly mouth watering twist on it! Happiness at its finest!
Don’t waste anytime wondering about what to prepare for this coming spring break party, or any party for that matter! This super delish and crunchy Plantfire Onion Rings will surely make everyone’s taste bud whirling and twirling! Savor it- don’t eat it all at once! (Although I know, this is very very hard to do!)

Plantfire Onion Rings
Ingredients
1-2 large onions, peeled and sliced in rings
1 cup unsweeted/unflavored almond milk
¾ cup whole wheat flour
1 tsp apple cider vinegar
sea salt and pepper, to taste
1 tbsp dry Italian seasoning
2 cups whole wheat bread crumbs
Instructions
1. Peel and slice onions into rings.
2. Meanwhile, make your batter by whisking the almond milk, flour, vinegar, sea salt, pepper, and seasoning together in a medium sized bowl.
3. Preheat oven to 450F. Dip each ring into the batter and then into the whole wheat breadcrumbs. Place on a lined baking sheet with silpat.
4. Bake for 10-15 minutes at 450F watching closely at the end. You want them very crispy and golden!
