Meatless Monday – Pistachio Cookies
Introducing: Your New Dessert Addiction!
One of my favorite aspects of eating a Plant-Based diet is the ability to snack on deliciously healthy desserts.. guilt free! Within the Plantfire diet there is zero calorie counting. When every thing you eat is an all natural whole food there is no reason to stress over a few Pistachio Cookies 😉
Your taste buds will be in paradise while you simultaneously fuel your body with this nutty treat! Totally raw and completely amazing you must try these cookies!
This is one of the first times we’ve used pistachios in a Meatless Monday recipe! I feel a few health facts are in order: Pistachios contain fewer calories and more potassium and vitamin K per serving than other nuts. Snacking on pistachios may help lower your cholesterol! Study participants who consumed a low-calorie diet with either 10 percent of their total calories or 20 percent of their total calories in the form of pistachios for four weeks lowered their cholesterol more than participants who followed the Step 1 diet for lowering cholesterol, according to a study published in the “American Journal of Clinical Nutrition”. If you like snacking on nuts, you can control your weight by limiting your portions. The fiber content of the nuts may make them more filling, helping you to eat fewer calories later on in the day!
Ingredients:
1 cup raw pistachios
½ cup raw cashews
3 tbs dry unsweetened coconut
3 tbs maple syrup
¼ tsp vanilla extract
pinch of Himalayan salt
Instructions:
1. Place the pistachios and cashews in the food processor. Process until the nuts are finely chopped. Add the coconut, vanilla and salt. Process again until all ingredients are combined.
2. Roll into balls and store in the refrigerator for 2 hours.
3. Serve and enjoy!

These look wonderful, any way to make for those of us who do not have a dehydrator?
Hi Beth Ann! It actually does not require a dehydrator. You can add all of the ingredients to your everyday blender, roll, and refrigerate!
