Meatless Monday – No Bake Oatmeal Raisin Cookie

Raise your hands high if you love to chill with a plateful of oh so yummy oatmeal raisin cookies! So delicious and addictive, not to mention so healthy because it’s pure plant-based, no sugar, no oil! An easy, no-bake, quick fabulous recipe for oatmeal raisin cookies that taste almost like you’re in cookie heaven!
Raw and no bake treats are my kind of pleasure that satisfy each healthy craving either for a snack or dessert or simply to brighten-up a day! Combining all the ingredients make it so flavorful! Imagine the taste of raisins, applesauce, cinnamon, coconut, and oats exploding in your mouth all at once… drool away now my friends!
These delightful cookies will give you a boost of energy and a feeling of utter happiness from the all-natural sugars of the raisins. A dose of healthy carbs from oats will make it a perfect snack anytime of the day. Plus, more health benefits from flax seeds starting with Omega 3!

No-Bake Oatmeal Raisin Cookie
Ingredients:
1 cup raisins (divided- ½ cup to be blended and the other half to be add in later)
1 cup unsweetened applesauce
1 cup shredded coconut (unsweetened)
1 cup oats
1 cup oats flour (blend the oats into powder form)
2 tablespoons ground flax seed
a pinch of salt
½ teaspoon cinnamon
Instructions:
- Blend the ½ cup raisins, and applesauce in a food processor. Set aside.
- In a bowl, mix oats, ground flax seeds, shredded coconuts, salt and cinnamon. Once you reached the desired consistency, add in the wet mixture of raisins and applesauce.
- Once the “cookie dough” consistency is reached, fold in the remaining ½ cup of raisins.
- Form the mixture into cookies and refrigerate until firm. Then, serve and enjoy!

Hi Maritza! Oatmeal is high in iron, therefore eating something that’s high in iron increases milk supply in some women. Hope you can try this recipe soon!
