Meatless Monday – No Bake Magic Bar
Plantfire’s Magic Bar recipe is a healthy twist on an old fashioned favorite!
Whether it be a delicious childhood memory, a family classic or a former “Hello Dolly”… I’m here to bring you the plant based version of a simply perfect dessert!
When I think of Fall I imagine beautiful color transformations, a nip of chilly air, pumpkins and scarves galore… and the cherry on top is spending the evening indulging your sweet tooth with something crunchy and chocolatey!
Am I right or am I right?!
The “magic” comes in the fact that there is no baking required! Six scrumptious ingredients blended into one perfectly sweet treat. Magic Bars just make my taste buds happy!
We know all too well about the tasty side of Magic Bars, let’s learn a bit about the healthy side of Plantfire’s delectable version:
Ezekiel Cereal – Ezekiel Cereal was created to endure unrivaled, honest nutrition and pure, delicious flavors. It is a special, unique combination of 6 grains and legumes that harvest benefits beyond what we normally expect. Ezekiel cereal is a complete source of protein at 84.3% efficient. It contains all 9 essential amino acids, increases digestibility, has an increased absorption of minerals, amazing source of fiber, and contains vitamins B & C.
Coconut – With coconut’s unique combination of positive health benefits, including fat loss and better brain function, they are one of the few foods that can be classified as a “superfood.” Did you know that studies show populations that eat a lot of coconut are amonth the healthiest people on the planet? Coconuts can help curb your appetite, making you eat less without even trying. Coconuts contain a unique blend of fatty acids with powerful medicinal properties, they can increase your energy expenditure which helps you burn more fat, and the lauric acid in coconuts kill bacteria, viruses and fungi which helps to stave off infections.
Almond Milk – Did you know that almond milk contains more nutrients than dairy milks and it’s fellow alternatives like rice milk? Almond milk is also a great alternative for those with soy and lactose allergies. Here are some almond milk benefits: helps with weight management, promotes heart health, is blood sugar friendly, helps with bone health, is great for skin care, and provides more muscle power! Drink up, Ladies and Gentleman!
Ingredients
1 cup Ezekiel cereal
¼ cup crushed walnut
½ cup reduced-fat, unsweeted coconut
1/3 cup natural peanut butter
½ cup almond milk
1 cup vegan chocolate chips
Instructions
1. Crush Ezekiel cereal in food processor. In separate bowl, add walnuts, coconut, and peanut butter. Stir
in Ezekiel cereal.
2. Slowly add almond and mix. If mixture does not hold together, continue adding additional almond
milk until all ingredients stick together. However, don’t make it too soft, and, if necessary, use your
hands.
3. Spread mixture evenly into a 9×9 nonstick baking dish.
4. Melt the chocolate chips in a double boiler. If you don’t have a double boiler use a saucepan – fill up
pan half way with water, bring to a boil, turn heat to low, then get a metal or ceramic bowl and place
chocolate chips inside. Place bowl in saucepan on top of water, heat for 3 minutes or until chocolate
chips are melted, whip with a spatula.
5. Spread chocolate mixture on top of peanut butter mixture. Refrigerate for 1 hour or until hardened.
Cut into squares and enjoy!
