Meatless Monday – Moroccan Okra and Chickpeas

This quick and easy Moroccan Okra and Chickpea dish is a beautiful mix of flavors that is totally divine! This recipe is a great way to explore your Moroccan style of cooking and creativity!
A powerful spiced dish bursting with a hypnotic aroma. Combining all the magical spices with real tomatoey goodness creates a special kind of experience. The okra gives this recipe a different level of tastiness. The chickpeas make this dish feel hearty. Serve it on your favorite grain and you have a full meal that will keep you going through the day.
A very healthy plant-based recipe that is low in fat and calories. Packed with protein courtesy of the chickpeas, and lycopene care of the gorgeous tomatoes. And of course, allow me to give you the health benefits that Okra provides….
It’s time to start our Moroccan adventure!
Moroccan Okra and Chickpea
Ingredients:
1 pound fresh or frozen okra
2 tablespoons chopped parsley
1 red bell pepper, diced
1 medium onion, diced
3 cloves garlic, mined
½ teaspoon ground ginger
½ teaspoon ground coriander
1 15oz. can diced tomatoes
½ cup vegetable broth
½ teaspoon ground cumin
1 15oz. can chickpeas, rinsed
Instructions:
- In a large saucepan, sauté with water the onion, garlic, red bell pepper, cumin, ginger and coriander for at least 5 minutes.
- Mix in tomatoes, chickpeas, okra and broth, then reduce heat to medium. Partially cover the pan and cook for 10-12 minutes or until the okra is soft.
- Add the parsley and season with salt and pepper to taste. Serve over your favorite grains!
