Meatless Monday – Minty Nectar Watermelon Salad
Get Ready for a Splendid Summer Salad!
The Minty Nectar Watermelon Salad is a cool, refreshing and with a totally different zest of summer delightfulness! This completely plant-based recipe is super easy and quick to prep, and it tastes just fantastic!
The lightness of the watermelon, as well as the simplicity of the dressing will make a sure hit for the entire family. Plus the added flavor of the mint will make it all perfect!
When you’re thinking of trying to beat the heat, especially in our Las Vegas side of 100+ summer afternoon, this healthy-licious recipe is on top of my list. Here’s another great thing about this salad- you can come up with your own combo (add some strawberries if you feel like it) and make as much or as little as you want.
Speaking of the health benefits of this wonderful salad, let’s start with the main ingredient, the watermelon! Watermelon is a nutrient dense food, a food that provides a high amount of vitamins, minerals and antioxidants for a low amount of calories. Watermelon contains more lycopene than any other fruit or vegetable, that may help protect against heart disease.
Blueberries on the other hand, contain antioxidants, which work to neutralize free radicals linked to the development of cancer, cardiovascular disease, and other age-related conditions.
Now let’s get on with the summer party!
Minty Nectar Watermelon Salad
Ingredients:
2 cups watermelon, diced
½ cup blueberries
3-tablespoon fresh mint leaves, minced
½ cup water
2-tablespoon maple syrup
Juice and zest of 1 lemon
Pinch of sea salt
Instructions:
1. Bring ½ cup water in a saucepan to boil.
2. Add 2-tablespoon minced mint in the saucepan, in low heat for 3 minutes.
3. Add the maple syrup, and then let it cool for 10 minutes.
4. Add the lemon’s zest and the juice. Add a pinch of sea salt.
5. Toss the blueberries and the watermelon in the mixture, then garnish with the rest of the minced mint.
Serve and enjoy!
