Meatless Monday – Lime Sweet Potato Dip
An All-Time Winner Dip That You Will Love!
It’s that time of year again… Back to school season and I figured it would be perfect to showcase these yummy, healthy sweet potatoes with a touch of white miso goodness, and fresh lime-infused tanginess that make this new fun-flavored dip something to be remembered and definitely enjoyed!
Sweet potatoes are naturally silky textured yet low in fat. They’re also a great source of beta-carotene and fiber. I know, I know… I’m now raving about it! =)
The lime sweet potato dip is a great idea for an appetizer or simply a healthy snack! This might be the perfect plant-based dish, as it goes well with just about everything. It’s an incredibly simple recipe too with its power lying in the balance of a few delightfully subtle flavors that compliment each other wonderfully.
I just can’t get enough how awesome these sweet potatoes are, so please allow me to give you a run-down of the amazing health benefits they offer!
Without further ado… here is my party-time Plantfire recipe for today!
Lime Sweet Potato Dip
Ingredients:
2 medium sweet potatoes
2 tbsp white miso paste
2 tbsp fresh lime juice
1 tsp fresh ginger, grated
½ tsp lime zest, grated. Plus more for garnish (optional)
Instructions:
1. Pierce sweet potatoes with fork, and microwave 7 to 10 minutes, or until soft. (or bake 1 hour at 400 degrees in the oven.) Cool sweet potatoes 10 minutes, or until easy to handle, and then halve and coarsely chop (leave skins on.)
2. Transfer chopped sweet potatoes to blender, add remaining ingredients and pulse until smooth, adding up to 2 tbsp water, if necessary to achieve desired consistency. Season with sea salt and pepper, if desired. Serve warm or at room temperature, garnished with lime zest, if using.
