Meatless Monday – Jolly Green Fruit Salad
Are you ready for a divine experience?
April means fruity perfection- succulent, rich and juicy fruits welcoming the awesome beach weather! With spring in swing, you can give yourself a break and create this super easy, and delightful jolly green fruity salad!
This rock star salad features all the natural flavors that your palate has been craving for. When the flavors come together, your taste buds will definitely be in salad heaven. So excited to highlight a recipe that puts all these wonderful fruity greens as the star of the spring feast!
1. Avocado is a good source of vitamin B6 and folic acid, which help regulate homocysteine levels. In addition, avocado has monosaturated fat and Vitamin E, which help in maintaining a healthy heart.
2. Kiwis have high potassium content that can help negate the effects of sodium in the body. Consuming kiwis also helps in promoting a better sleeping pattern.
3. Green Apples are rich in Vitamins A, B, C and E that are good in achieving a glowing skin. Green apples can also help people who are experiencing liver and digestive problems.
And we are ready to rock and roll!!!
Jolly Green Fruit Salad
Ingredients:
1 avocado, diced
1 green apple, sliced thin
1 tablespoon lemon juice with some zest
2 kiwis, sliced into thin rounds
2 tablespoons roasted/ salted pistachios, chopped
1 tablespoon fresh mint, minced
1 tablespoon maple syrup
***mint for garnish
Instructions:
1. Combine all the ingredients into a large bowl.
2. Toss well with spoon.
3. Garnish with mint
4. Serve and enjoy!
*** You can also chill the salad until ready to serve.
