Meatless Monday – Indian Inspired Quinoa and Cherries
Protein Power Party… here we go!!!
First of all, who says healthy eating is boring? Today’s Meatless Monday dish is so amazing that I guarantee each bite will bring out a flavor-packed experience.
The Indian Inspired Quinoa and Cherries offers an awesome taste sensation because of the combination of some Indian elements, which is oh so appetizing! Another layer of flavor is added when veggie broth is used to cook the quinoa, plus the fresh lime just adds the perfect hint of zest. The cherries are a fun addition to this dish, which create a wonderful texture and a fun and interesting way to enjoy this delectable creation!
This dish is super healthy and delightfully delicious. Quinoa is the key ingredient that provides so much health benefits!
Hands down to another special plant-based recipe! So here’s the count down to today’s gastronomical adventure- 3, 2, 1!
Indian Inspired Quinoa and Cherries
Ingredients:
1 teaspoon fresh ginger, peeled and grated
1 teaspoon ground turmeric
¼ teaspoon ground cumin
¼ teaspoon ground coriander
1 cup quinoa, well washed and drained
1 ¼ cup veggie broth
¼ cup dried cherries, chopped
1 cup fresh spinach
½ cup thinly sliced green onions
¼ cup fresh lime juice
½ cup sunflower seeds, lightly toasted
Instructions:
1. In a medium pot, stir ginger, turmeric, cumin and coriander over medium heat until fragrant.
2. Add quinoa and stir to coat. Add vegetable broth, bring to a boil, and then reduce heat. Cover and simmer for 15 minutes, or until all broth is absorbed. Remove from heat, leave covered for 5 minutes.
3. Stir in cherries, spinach, green onions, and lime juice. Season to taste with salt and pepper.
4. Sprinkle with sunflower seeds, and serve.

Sounds good. I will try it.
I like to take quinoa and put it in a very hot pan. Roast it on the stove. Add water and cook till finished. No cover. It is extra good this way.
