Meatless Monday – Hummus Stuffed Mushrooms and Cherry Tomatoes
Your Holiday Party Prep Just got a ‘Hole’ Lot Easier!
(Pun Intended)
I present to you your new favorite Hors D’oeuvres! This time of year is full of Holiday parties, potlucks, and plenty of hosting opportunities with little time for preparation. These hummus stuffed beauties only require 3 ingredients and are always a crowd pleaser.. (plus, they make you look like a culinary connoisseur with an eye for detail!) Top with basil and you’ve got a healthy treat with easy clean up and satisfied guests.

With this recipe you can use any hummus flavor your heart desires! Just be sure to steer clear of oils and additives from store bought brands. I absolutely love my Roasted Red Pepper Hummus, which is what we use in this recipe. Here are the ingredients/instructions to make this scrumptious mushroom stuffing hummus!
Roasted Red Pepper Hummus
(These portion sizes prepare roughly 4 cups of hummus)
2 15-oz. cans of chickpeas, drained & rinsed
2 red peppers, roasted (or half of a 15-oz. jar)
3 TBS fresh lemon juice
2 cloves of garlic
½ tsp cumin
sea salt, for taste
Place all ingredients in to your food processor or blender and mix until smooth!
Now on to the main attraction!
Hummus Stuffed Mushrooms and Cherry Tomatoes
Ingredients:
Keep in mind that the amount of mushrooms and tomatoes you use is dependant on how many people you’re serving. For a party of 5-10 people I would prepare for around 3 per person.

Roasted Red Pepper Hummus
Instructions:
1. Twist and pull the stem out of the mushroom and carve out a little hole with a knife or spoon. For the cherry tomatoes slice the top of the tomato 3/4 of the way off, still dangling on (this provides a bit of a lid once stuffed with hummus) Use a spoon or knife to scrape out the inside of the tomato.
2. Using a spoon stuff the mushroom and tomatoes with hummus as deep and piled as high as you would like.
3. Garnish with basil and serve!
