Meatless Monday – Holiday Lentil Soup
Attention Soup Lovers!
A fabulous bowl of soup to warm up the season is coming your way via my #MeatlessMonday shindig! Made mostly from simple yet healthy ingredients, this Holiday Lentil Soup is loaded with flavors that are familiar to your palate but will undoubtedly amuse your heart.
Savor the aroma upon serving this hearty and delightful soup, which goes beyond basic broth! The lentils and all the rest of the veggies are satisfying and will fill you up. Lentils pair well with a variety of flavors and textures from butternut squash to tangy tomatoes. Adding a distinct taste to this soup is the combination of cumin, onion and garlic, which is one of the things I love!
This lentil soup will be a welcome addition to any holiday hearty meal table and will definitely be a bestseller in no time! Guests and family alike will admire this soup and will certainly ask for seconds. And one of the best parts? This soup will nourish your body and will be easy on your digestive system, as it will give you a break from all the other decadent holiday food. Bring on the holiday soupy vibes!
Holiday Lentil Soup
Ingredients:
2 cups red lentils
2 carrots, diced
2 cups butternut squash, diced
3 cloves of garlic
½ medium onion, not chopped
½ medium onion, chopped
4 stalks of celery, diced
2 tomatoes, diced
¼ teaspoon cumin
* water
sea salt and black pepper to taste
Instructions:
- Boil 5 cups of water in a large pot. Add the lentils, 1 clove of garlic (whole) and the ½ onion (not chopped). Bring to a boil and reduce to medium heat. Cook for 15 minutes.
- In another large pot, sauté with water the chopped onion, and chopped garlic for 3 minutes. Add the tomatoes. Cook for another 3 minutes while stirring. Add the carrots, celery and butternut squash. Cook while stirring for another 5 minutes.
- When the lentils are finished cooking, remove the onion and the garlic, and then add the lentils to the vegetables. Cook on medium heat until the carrots and butternut squash are tender.
- Add the cumin. Add the salt and pepper to taste. Serve and enjoy! =)
