Meatless Monday – Fruity Kale and Quinoa Summer Salad
A Colorful and Delicious Summer Treat!
Celebrate this HOT- yes it’s a HOT season with a refreshing serving of the Fruity Kale and Quinoa Summer Salad! A mishmash of nutritional powerhouse- quinoa, kale, fruits, nuts and a perfect dressing- that can be a light yet full meal option!
A clever creation in one bowl of goodness! Each bite is bursting with different flavors- citrusy, fruity, nutty, and sweet! You will definitely love the combined flavors of the fruity-licious mango and strawberry mixed with some chopped pecans for a delightful rich buttery finishing touch! And how can I even begin to describe the mesmerizing taste of this wonderful dressing? Lime juice and medjool dates are a match made in heaven!
This grain-based quinoa super-food salad is layered with so many healthy and vibrant elements that your body will adore! These amazing little grains are so versatile and packed with protein, vitamins and all the essential minerals you will ever need! And my favorite strawberries have so many health benefits to offer……
So let’s start with something light, yet something wonderful…. Here it is, our latest go-to salad!
Fruity Kale and Quinoa Summer Salad
Ingredients:
For the Salad:
1 cup quinoa, rinsed
1 ½ cups kale, shredded
1 cup fresh strawberries
1 cup mango, cubed
2 tablespoons pecans, chopped
For the Dressing:
2 tablespoons balsamic vinegar
2 tablespoons lime juice
½ cup water
7 medjool dates, pitted
Instructions:
- Combine quinoa and 2 cups of water in a saucepan. Bring to a boil. Cover, reduce heat to low, and simmer until water is absorbed and quinoa is translucent and tender, for about 10-15 minutes. Transfer to a large bowl, fluff with a fork and let it cool.
- Combine all the dressing ingredients in a blender until desired consistency is achieved.
- Mix quinoa with all the salad ingredients, and toss lightly together with the dressing. Then serve and enjoy.
