Meatless Monday – Festive Moroccan Chickpea Bowl
The Real Adventure Begins…
Come fly with me to an exotic foodie trip via this Moroccan inspired plant-based dish that is so rich in texture and flavor! The Festive Moroccan Chickpea Bowl is a combination of vibrant concoction of spices, healthy veggies and a fascinating sauce, which create a delectable beauty in the eyes and a pleasure to the palate!
The aroma coming out of the oven from the spiced coated butternut squash is truly mouth watering. All the gorgeous vegetables are full of taste, adding another layer of excitement to your meal. Most of the nutritional benefits of the vegetables like chickpeas, butternut squash, and broccoli are featured in my previous posts so feel free to check them out anytime. All these amazing chow on top of a healthy couscous will make a great dinner for the entire family, like one big happy party in the house!

Festive Moroccan Chickpea Bowl
Ingredients:
3 cups diced butternut squash
1 15-oz. can chickpeas, rinsed
1 cup fresh broccoli
½ teaspoon ground ginger
½ teaspoon ground coriander
½ teaspoon ground cumin
lemon wedges for garnish
sea salt and pepper to taste
1 lb couscous
Instructions:
- Pre heat oven to 400degree-fahrenheit.
- Mix the spices together with the salt and pepper.
- Cover the butternut squash with the mixture and put them on a silpat and bake for 20 mins.
- Cook the couscous according to package instructions.
- Set aside the baked butternut squash and the cooked couscous.
Sauce:
1 portabella mushroom, diced
1 15-oz can diced tomatoes
1 tablespoon onion, chopped
1 clove garlic, chopped
2 tablespoons cilantro
sea salt and pepper to taste
Instructions:
- In a large saucepan, sauté with water the mushroom for at least 5 minutes.
- Blend the tomatoes with the rest of the ingredients.
- Transfer the blended ingredients to the mushroom pot. Boil for 3 minutes and season with salt and pepper.
- Mix in the cooked broccoli and chickpeas.
- Assemble the dish together and serve!
