Meatless Monday – Edamame Pineapple Multi Grain Bowl

It’s finally here – My first ever Meatless Monday post. This is an ongoing series which will be posted every Monday morning for you! (And sometimes I will include a video of me preparing the meal as a point of reference for your kitchen.) Use these recipes to hone your culinary finesse, teach your children that being healthy is fun, and encourage a vibrant life to all of the people in your sphere of influence!

Edamame Pineapple Multi Grain Bowl
Ingredients
1/2 Cup Pineapple Juice
1/2 Cup Water
1 tsp Ginger, Finely Grated
2 tbs Yellow Miso
2 Cups Cooked Quinoa*
2 Cups Cooked Brown Rice*
2 Cups Edamame, Shelled
1 1/2 Fresh Pineapple, Chopped
1/4 Cup Cilantro, Chopped
1 Cup Kale, Finely Chopped
*Feel free to choose only one grain if you prefer
Instructions
1. In a large skillet, add the pineapple juice, water & ginger and simmer over medium-high heat.
2. Remove from heat and whisk in yellow miso.
3. Return to heat, add quinoa, rice, edamame, and pineapple.
4. Toss gently and cook until the liquid is absorbed and everything is heated through.
5. Stir in the cilantro.
6. Serve up and enjoy a little piece of heaven!
