Meatless Monday – Double Citrus Quinoa Salad
A Super Salad, Super Food!
One of my most favorite salad creations is to bedazzle the healthy greens with these tiny super foods called quinoa! Therefore, it’s my pleasure to present the double delish, Double Citrus Quinoa Salad!
Why do I love this salad? Let me count the ways….
I love this salad because it offers an all-star, super food ensemble and it’s so easy to make. The vibrant greens and oranges are such a feast to the eyes and a joy to the palate! I love this salad because it’s bright and fresh and there’s only a trace of richness that complements the texture in every bite! I love this salad because it’s refreshing and light with a hint of zest that is delivered by the citrus combination of kumquats and oranges. I love this salad because the nutrition it provides clearly keeps your body and mind in tiptop shape. Oh how I love thee!
And speaking of how nourishing this super salad is, remember that quinoa is packed with protein and a lot of anti-oxidants. Plus, of course, oranges are amazing sources of Vitamin C. Here’s more to why you need to eat oranges….
Enjoy a Healthylicious Start of the Week!
Double Citrus Quinoa Salad
Ingredients:
1 cup quinoa
1 cup veggie broth- low sodium
¼ cup water
1 cup fresh spinach, chopped
1 cup kumquats, deseeded, sliced (leave the peel on)
½ cup fresh orange juice
1 teaspoon orange zest
sea salt and pepper to taste
Instructions:
- Heat the veggie broth and water in a medium-sized pan. Reduced to a simmer and add the quinoa. Cook covered stirring occasionally for 15 minutes.
- Transfer cooked quinoa to a large bowl, and let chill. Then mix the remaining ingredients together. Serve and enjoy.
