Meatless Monday – Dill-Infused Potatoes and Greens
A Fulfilling Tasty Treat!
Bright and breezy on a Monday is the perfect time to get fully loaded on potatoes and greens! The fulfilling earthy flavor of the tender potatoes is so good, especially when mixed together with the green beans. Complimenting the duo is the presence of vinegar to intensify the flavor! Did I mention the tanginess and sweetness delivered by this awesome spice dill? Yummm!!!
Whether eaten warm or just out of the fridge, the Dill-Infused Potatoes and Greens is super quick (boil and toss and viola!) super healthy and super delish dish pairs wonderfully with your left over tofurkey or any vegan snack available at hand! You can also be creative and put in some black beans to add more protein! And while we are on the subject on nutrition, allow me to share with you the health benefits of eating potatoes…

Dill-Infused Potatoes and Greens
Ingredients:
8 oz. baby red potatoes, cut into 1 x ½-inch pieces
4 oz. green beans, cut into 2-inch pieces
3 green onions, white and pale-green parts chopped (¼ cup)
2 tablespoons white balsamic or any mild variety, such as white wine or rice vinegar
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
Instructions:
- Cook potatoes in pot of boiling salted water for 8 minutes, or until tender. Add green beans during last minute of cooking.
- Heat skillet over medium heat. Add greens onions and water. Cook for 4 minutes or until tender but not browned. Remove from heat then stir in vinegar.
- Drain potatoes and green beans. Toss with mixture, parsley and dill. Season with salt and pepper if desired.
